when will voice typing support Greek?

As provided by the Q&A Assist, I can confirm that the language isn't supported yet as of now. Similar requests have been brought up before, but it probably haven’t reached enough demand yet for Microsoft to prioritize adding it. You may check these past threads:

Greek is not currently listed as a supported language for Windows voice typing.
